Chicken & Dumplings

This is a rather slow process.  Although you could certainly used canned chicken broth, fresh “carcass” broth tastes soooo good!

History:  at Granny’s (my mom) house for Thanksgiving, it’s tradition that we have a light supper before us kids all head home.  We call it “Carcass Soup” and quite honestly, I’d rather skip the turkey dinner and go straight to the soup.  When she makes it, she uses the turkey carcass and boils it while we visit all afternoon, and then uses the leftover stuffing and mashed potatoes to thicken the broth.  She also adds homemade noodles, which are incredible.

I’ve adapted that idea to just a chicken, something we eat more often, and the kids are just as happy with dumplings, and they certainly don’t take nearly as long to make as homemade noodles.

Chicken & Dumplings

Prepare 1 whole chicken–boil, broiled, rotisserie, etc.  Eat for a meal and save some of the breast meat (or add enough breast meat for soup).  After the legs, thighs, etc. are removed, throw the carcass bones into a large pot, cover with water, and simmer.  Add onions, celery, and carrots to taste.  Boil at least 1 hour, but as long as 2-3 hours is fine.  Strain (I use a pasta pot that has a built in strainer).

Pick over the leftover chicken meat and add to the pot.  Season with poultry seasoning, thyme or sage (I prefer sage because Granny always put the stuffing into the soup), and add celery salt, salt, pepper to taste.

Add diced potatoes, carrots, celery, and whatever frozen veggies (I added corn).  Simmer approx 30 minutes until the veggies are tender.

Meanwhile, make the dumplings.  I use Old Pioneer buttermilk biscuit mix (aside:  today I accidentally used their pancake version which was sweeter) and the recipe on the box.  It’s about 2 cups of mix, 2/3 c. milk, and 1 tsp. poultry seasoning.  Basically biscuits with seasoning added.

I stir 2-3 T flour in cold water and then dump into the soup and stir until thickened.  Then I begin dropping the dumplings into the hot broth by tablespoon.  Although everyone loves dumplings, I can’t make a double batch in my stock pot — they need a little room in between to let the steam rise.  Cover and let steam about 10 minutes.

Our favorite way to serve:  a scoop of mashed potatoes in the bowl, topped with thick, yummy soup and a dumpling.

Stick to your ribs good.

Dessert tonight was homemade bread slathered with homemade apple butter and it was soooo good!!

Cooking Insanity Continues

Thanks to Bethanie’s comment about canning, and Suzanne’s terrific post on how to make apple butter, I’ve got a pot of apples cooking on the stove too.  I don’t think this will make so much I’ll have to worry about canning–I’ve had the apples a couple of weeks and had to throw a few out.  I’ve never really cared for apple butter before, but I’m thinking a bit on some of my homemade bread may be to die for.

Oh, and the monsters went next door to play with a neighbor, That Man is glued to football, and I’m caught up on dishes…

So I’m going to work on finishing my Day Sheet for the MF.

A Cooking Fool

I’m sick and tired.

I let everyone in this family tell me what they want for dinner.  Of course, nobody can agree.  Since I’m an amiable (people pleaser), this puts me under stress.  Sounds ridiculous to be stressed over dinner, but I am, because it’s impossible to please everyone.  One person upset makes me upset.

I’m tired of trying to make healthy dishes for myself and whatever the monsters/That Man want.  Basically cooking two dinners a night.

I’m tired of being tired after a long day at the Evil Day Job and That Man or the monsters putting up for takeout.

I’m certainly extremely sick and tired of seeing how much we spend on said eating out.

All because I don’t have a plan and I don’t stand firm to that plan.

So this weekend, we made a trip to Sam’s Club, I renewed my expired membership, and I bought a ton of food.  Today, I threw two chickens in the oven to slow-roast while we were at church.  We ate one chicken for lunch.  We tore apart the other one:  legs, etc. in a bag for later in the fridge, and all the breast meat in another.  I’ve got both carcasses boiling away on the stove with veggies, and later today I’ll make chicken and dumplings for dinner.  I thought that was too much chicken in one day, but everybody begged for dumplings.  If I play that right, I’ll get two meals out of the broth/white meat and a quick meal for the kids tomorrow night (That Man is going to be away for business and I don’t eat dark meat, so there’s plenty left).

I’ve got a roast I’ll throw in the crock pot Tuesday.  I’ll get at least two meals of it by using the leftovers for stroganoff.

In the oven right now, I have a huge pan of meatballs and another pan of meatloaf, both made with extra lean hamburger.  I’ll freeze them both once they’re cool.

I have homemade bread rising on the counter, and another batch bubbling in the big bowl that I’ll store in the fridge for up to two weeks (but it won’t last NEAR that long–I seem to make bread about every couple of days).

It may not all be “diet” food, but it’s homecooked and I’m making smart substitutions where possible.  And if anyone dares whine and moan about having to eat at home, why, they can make their own @#&*$ dinner.

Now, of course, I have a buttload of dishes to do.

Unfortunately, between the website move, a lovely visit from My Beloved SIs and Papa from Mexico yesterday, and all this cooking today, I haven’t even thought about the Mayan Fantasy.  Back to Dark & Early tomorrow.

The Flip Side!

I’m sure things aren’t quite right, but for the most part, the key pages are back and functioning.  If you see any errors or have problems, please let me know!  I’ll be working with Deena later to get Subscribe to Comments and Smilies.  Oooh, how I’ve longed for Smilies!  I never could get them to work on yahell.

I’m not in love with this theme, but it had the key things I needed (black header, lots of black/red, white writing area, and page nav).  When I first loaded it, some comment text was in Italian!  *boggles*  If I missed any (other than the tag at the very bottom) let me know.

I’m still feeling my way around on how to define categories, tags, etc. so things might change a little.

Pleasure Unbound by Larissa Ione

Larissa managed to pull off something only Lynn Viehl and Laurell K. Hamilton have done recently.  She made me read a book in ONE SITTING.

I picked up Pleasure Unbound over lunch today and then dared to flip through a few pages while I was cooking dinner.  I didn’t really know what to expect as far as the demon angle was concerned.  They’re not my favorite paranormal creature by any means.  Although I’ve enjoyed Larissa’s work before, I didn’t expect to be sucked in so fully.  My eyes are killing me, but the book is finished and I just had to blog about it.

Hells bells indeed!  What a great read.  Very sexy, definitely.  I especially adored the relationship between Eidolon, Wraith, and Shade, three brothers of the Seminus (incubi) demon line.  Tayla is an incredible heroine, and the conflict and sexual attraction between her and Eidolon just burns on the page. 

A mentor once told me that to write a great romance, the conflict had to be extreme.  Like if the hero was a firefighter, the heroine had better be an arsonist.  In Pleasure Unbound, Tayla is a demon slayer, a member of the Aegis.  As far as the demons are concerned, the Aegis are the murderers.  When mutilated demons begin showing up at Underworld General Hospital (UGH, giggles), of course Eidolon suspects the Aegis of foul deeds.  Naturally, he looks upon the injured human slayer with suspicion, but he’s a doctor first, demon second, although he has a hard time remembering that once his incubus nature takes over.  Tayla and Eidolon have very solid reasons for hating and fearing each other, but their relationship develops anyway.

Other than a few little POV shifts (I’m a purist, so I don’t like shifts mid-scene), I was treated to a fun, engrossing story.  This is definitely a world I’m looking forward to vising again!

Revision Xibalba

I’ve actually begun the second draft. I’m letting myself “warm up,” so to speak, without a lot of pressure right away. I’m slowly working back toward a Dark & Early schedule. I don’t want to overwhelm myself. Although I’ve done tons of planning, something could still go wrong. I could still find a yawning plot hole ahead, or realize I don’t know this new character at all. So I’m cautiously feeling my way ahead.

The Maya had a phrase, “he entered the Road,” or “he entered the White Road,” to describe death. The White Road led through Xibalba, the Place of Fright, to the Great Ceiba, or World Tree, “Raised-Up Sky.” At the end of every day, the Sun Lord dies and becomes the Jaguar Night Sun. He must pass through Xibalba, battle the Lords of Death as he passes through the Milky Way (the White Road), until he reigns triumphant over the day once more.

I very much feel as though the White Road stretches beneath my feet. I’ve entered the Place of Fright. You’ve seen how many characters and story lines I need to weave in this story, and although I have a good start on Jaid’s story after finishing the first draft, there’s still a considerable amount of work to accomplish. I know the Lords of Death wait for me, plotting ways to trick me into staying in Xibalba forever instead of passing through successfully.

It’s not the World Tree I aim for, exactly. This journey takes me to Kukulkan’s pyramid on the other side. (See Well of Sky, my free read at Drollerie) It looks a lot like this.

And yes, all this story asks for is my heart.

I helped her revise her story last night and printed it off on 6 pages (including the title page) so she could illustrate it. When she’s done, I’ll scan some copies — they are hilarious. Monster Tale

It’s been awhile since I had a worthy tale, but this one is pretty darned good.

We decided to try a new place to eat tonight, one of our old time favorites from Eagan, MN (Old Chicago) that has recently opened. On the way, we had to cross James River, and shortly after passing it, the van was suddenly filled with a wretched odor that had both That Man and I gagging. Seriously, it smelled like the bog of eternal stench. Since we’d just crossed the river, we thought maybe that was the smell, but it just got worse and worse.

Of course, I soon suspected that one of the monsters was suffering from a gas problem. The two littlest would have claimed it proudly if they’d unleashed that torment on us, but they both denied the smell. That meant Princess Monster had done it. Oh, yes–I knew she’d lie about it because she was embarrassed. (Princesses try very hard not to have gas, you know.) Red-faced, she finally admitted she’d done it just as we entered Old Chicago.

So we’re sitting at the table, talking and laughing about how she’d denied it, she suddenly got a story idea. I’m not kidding. I thought I was the only one who sat at the table scribbling madly on a napkin! Tossing ideas back and forth with me, she finished her first draft. Spelling as she wrote it.

It Wasn’t Me

A kid named John (Me: of course, even in the story, she couldn’t claim it–blame it on Uncle John!!) was sitting in the car and tuted (Me: cracks up) in the car.

The whole family gaged. And he said It wasn’t me!

One day they were in the house and the whole city gaged. And he said It wasn’t me!

One other day he was at the White House and he tuted and here came the whole army and he said It wasn’t me!

One day he was at the Impier State Building and tuted. The whole universe gaged, even the alains. And he said It wasn’t me!

But the whole universe said It was him. Then he confessed.

Brainstorming her idea, we decided to add a scene with the President trying to escape the smell on Air Force One (after I explained what AF1 was) and also Ben Franklin’s face sliding off Mount Rushmore.

It’ll be a best seller, I’m sure.

P.S. I’m keeping the napkin.

P.S.S. Yes, she gets the fragment habit from me. I’m working on that. Mine, not hers. ;-) :D

Fess Up Monday

With Revision Xibalba (RX) starting next week, I worked on finishing character details last week. I wrote up some nice backstory for all the main characters I wanted to consider. Although I didn’t finish the key backstory/event for Charlie and Sam, I did outline it all. I couldn’t get enthused about writing it carefully–as I would to share it publically–but I did want to capture the events. It does all come full circle, so it’s important that I know about it. I just didn’t feel like I needed to know it perfectly, although I reserve the right to come back and finish it later. I planned to give those snippets away eventually.

It’s time to clean my desk, figuratively and literally. If you have anything you want me to read, this is a good week. Once I’m head down, nose to the grindstone, it may take several weeks of snippets of reading time instead of a long dedicated time. I’m out of books, so I shouldn’t be tempted there, unless I buy new ones. (Always a possibility.) I have several TBR piles, but they’re all still packed in the garage.

I have a few short character notes I want to make, and I want to write up the synopsis. I want to treat this like a formal proposal and have query and synopsis in hand, although I’m not sending anything out yet. I want to get this next pass well started, and let the dust settle on the Letters queries/packages before starting a new round. One book in the query stage is hard enough to manage, let alone two. Likely, I won’t be in a position to query NSR until early 2009, but it would be sweet indeed if I wrapped up the revision and could send a few chapters to my brand new agent before Thanksgiving. One can dream, right????! Please don’t wake me up.

If I owe you a package, I’m going to try very, very hard to get it in the mail before RX.

This week is also significant in my writer’s journey, so I’ll be writing up a post celebrating my fifth birthday as a writer. My, the time does fly, even when it seems the slow slog will never end.
